Description
The blend (±61% Chardonnay and 39% Pinot Noir) is dominated by Chardonnay from, among others, Chouilly, while Pinot Noir – with a prominent role for Bouzy – adds structure and depth. On the nose, a complex mix of orange peel, dried apricot, brioche and toasted hazelnut unfolds, complemented by a distinctive reductive hint of flint. On the palate, the wine is creamy and layered, with ripe stone fruit, subtle citrus bitters and a fresh, saline tension. The mousse is velvety, and the structure is powerful yet refined. The long, mineral and lightly phenolic finish is reminiscent of 2003 upon release, with impressive ageing potential.

Serving Suggestions
A distinctly gastronomic Champagne, ideal with lobster, scallops, turbot or poultry in a creamy sauce. Also excellent with refined Asian dishes where tension and umami converge. Best served at 8–10°C in a generous glass to fully express its aromatic complexity.
